Sweet Carnival fritters (chiacchiere)

A healtier version of traditional Italian Carnival treats, vegan and oven baked.

Ingredienti
  

  • 200 gr cooking cream or plain yoghurt *
  • q.s. flour (about 270 gr)
  • 1 orange zest
  • 1 pinch salt
  • q.s. brown sugar icing

Istruzioni
 

  • Put the cream or yogurt in a bowl, add a pinch of salt and the orange zest.
  • Begin to knead with a fork adding flour gradually until dough is firm, soft but does not stick to your hands. Alternatively you can also use a mixer, pour into it the cream or yogurt and then as flour as needed to obtain a dough that does not stick to the sides of the mixer.
  • Put the dough on a board and cover with a bowl, let it rest for half an hour.
  • Preheat the oven to 350°F and line a large baking tray with parchment paper.
  • Roll out the chiacchiere dough into a thin sheet, cut it into preferred shapes and place them on the baking tray.
  • Bake the chiacchiere for 4 to 5 minutes. Keep an eye constantly on them to prevent from browning: they just have to get slightly golden.
  • After baking let the chiacchiere cool down then sprinkle them with vanilla icing sugar and serve.

Note

*You can use either soy cream or yogurt, or cow if you're not intolerant or vegan.
It is also possible to deep fry the chiacchiere in peanut oil instead of baking.
The chiacchiere keep well for 4 to 5 days closed in a cookie tin at room temperature.
