Best baked potatoes recipe

  • 1 kg potato (better new or red)
  • 50 ml olive oil
  • q.s. rosemary fresh
  • q.s. sage fresh leaves
  • q.s. salt
  • q.s. pepper


  • Wash the potatoes using running water and a brush to remove any dirt.
  • Peel each potato and wash it again. Cut the potatoes into regular cubes or wedges and soak them in cold water for 30 minutes.
  • Alternatively you can blanch the potatoes in lightly salted water for 3 to 5 minutes (depending on the sizes you've cut them) and thus avoid to wait for the soaking.
  • Drain the potatoes and dry them well using kitchen paper or a clean cloth.
  • Put the potatoes in a large oven pan, season with oil, salt and pepper to taste and mix well with your hands. Take care to arrange the potatoes so that they are not overlapping.
  • Bake the potatoes in preheated oven at 360°F with grill on for 30 minutes, turn halfway through cooking.
  • Wash and chop the herbs, add them to potatoes and mix well. Bake at 400°F for 10 minutes more or until desired browning, then serve.
