Wash the potatoes using running water and a brush to remove any dirt.
Peel each potato and wash it again. Cut the potatoes into regular cubes or wedges and soak them in cold water for 30 minutes.
Alternatively you can blanch the potatoes in lightly salted water for 3 to 5 minutes (depending on the sizes you've cut them) and thus avoid to wait for the soaking.
Drain the potatoes and dry them well using kitchen paper or a clean cloth.
Put the potatoes in a large oven pan, season with oil, salt and pepper to taste and mix well with your hands. Take care to arrange the potatoes so that they are not overlapping.
Bake the potatoes in preheated oven at 360°F with grill on for 30 minutes, turn halfway through cooking.
Wash and chop the herbs, add them to potatoes and mix well. Bake at 400°F for 10 minutes more or until desired browning, then serve.
