Sift together the flours and add the salt. On a large cutting board, make a mountain out of flour mixture then make a deep well in center.
Add a little water into the well. Begin kneading with your hands adding more water little by little, stop when you get a smooth dough. Allow it to rest on the cutting board, covered with a clean cloth for 30 minutes.
Roll out the dough to a thin sheet, dust it with a little flour as you flatten. Cut into noodles.
Bring water to a boil in a large pot, then add a handful of coarse salt. Pour the pasta and drain it as soon as it floats.
Toss with your favorite sauce and serve.
