Mini hazelnut apple pies

For the hazelnut olive oil crust

  • 60 g spelt or all purpose flour
  • 40 g whole wheat flour
  • 60 g shelled hazelnuts
  • 50 g sunflower oil
  • 65 g brown sugar
  • 1 pinch of salt

For the apple filling

  • 2 small apples
  • 1 tablespoon brown sugar
  • 1 tablespoon rum
  • 1/2 teaspoon natural vanilla flavor


  • Chop the hazelnuts finely using a blender, put them in a bowl with the flours, brown sugar, salt and mix well.
  • Add the oil and knead until you have a compact dough. Close it in a plastic bag and put in the fridge.
  • Preheat the oven to 360°F. Wash the apples, peel them (you can skip this if you use organic fruit), cut them into small pieces. Put the apples in a pan with brown sugar, rum and vanilla and cook over low heat for 15 minutes. Remove from heat and let cool down.
  • Divide the crust dough into half; use one to cover the bottom of four 3 inch tart molds. Fill each pie evenly with apples and cover with the remaining crust.
  • Cut a small cross in the top of the pies and bake for 30 minutes. Turn the oven off and let the pies cool down in the oven with the door slightly opened.


You can serve these mini apple pies warm or cold, sprinkled with cinnamon to taste.
When cool the mini hazelnut apple pies keep in the fridge for 4 days.
