Easy asparagus quiche

  • 1 bunch green asparagus about 400g
  • 1 ready rolled puff pastry sheet palm oil free
  • 250 g fresh ricotta cheese
  • 1 organic egg
  • 2 tablespoons grated seasoned ricotta cheese
  • 1 teaspoon turmeric
  • fresh basil q.s.
  • salt pepper q.s.
  • 1 tablespoon sesame seeds
  • 2 tablespoons milk


  • Clean the asparagus by removing the woody, tough part of the stem from the nice tender one. Steam cook for 10 minutes.
  • Meanwhile put in a bowl the ricotta, egg, seasoned ricotta cheese and turmeric; mix well with a fork or whisk to obtain a smooth cream. Season with a little salt, pepper, chopped fresh basil leaves and set aside.
  • Preheat the oven to 390°F. Unroll the puff pastry and place it on a pan lined with parchment paper. Take care to form a base with a 1 inch border, to contain the quiche filling.
  • Prick the puff pastry base all over with a fork and pour the ricotta cream into it.
  • Place the asparagus over the ricotta cream and close the edges of the puff pastry on the quiche filling.
  • Brush the puff pastry edges of the quiche with milk and sprinkle the whole surface with sesame seeds. Bake for 30 minutes.


The asparagus quiche can be served freshly baked, enjoyed warm or cold, it's delicious anyway.
