Healthy granola cookies

  • 35 g rolled oats
  • 70 g spelt flakes
  • 30 g puffed millet
  • 10 g puffed rice
  • 25 g whole spelt or wheat flour
  • 25 g cane sugar
  • 1 tablespoon goji berries
  • 1 tablespoon sesame seeds
  • 1/2 teaspoon baking powder
  • 1 pinch of salt
  • 20 g sunflower oil
  • 50 g water
  • 10 g honey or malt syrup for a vegan version


  • Mix rolled oats, spelt flakes and puffed rice. Blend them coarsely usign a blender, then pour into a bowl.
  • Add into the bowl the puffed millet, spelt flour, sugar, salt and baking powder. Also add the sesame seeds and goji berries.
  • Mix in a glass the oil, water and honey then pour them into the bowl with dry ingredients. Mix well using your hands.
  • Knead briefly just to compact the dough; let it rest in the fridge for 15 minutes.
  • Preheat the oven to 360°F and line a large baking pan or tray with parchment paper.
  • Take the cookie dough out of the fridge and get a 2 1/2 inch pastry ring.
  • Form the granola cookies by pressing the dough with a teaspoon into the pastry ring, directly on the parchment paper. Each cookie should be about a quarter inch thick.
  • Bake the cookies for 25 minutes.
  • Remove from the oven, let cool down and enjoy your crunchy granola cookies.


Store the granola cookies in a cookie jar or airtight container to keep them crispy up to two weeks.
Apart from rolled oats, you can change the grains used in this recipe as long as you keep this ratio: 80g of puffed cereals or flakes must be choppend with oats while 30g must be added to the cookie dough without being chopped.
Sesame seeds can be replaced with other seeds of your choice such as flax, pumpkin, sunflower or a mix; same thing for goji berries that can be replaced with dried fruit to taste (such as cranberries or apricots, cut into small pieces).
