Chia vanilla pudding {vegan, gluten free and sugar free}

  • 250 ml rice milk
  • 30 g organic chia seeds
  • 1 teaspoon stevia powder*
  • 1/4 whole vanilla bean


  • Place chia seeds in an airtight container that is large enough to hold all the ingredients of the recipe.
  • Add stevia (or your favorite sweetener), vanilla bean seeds and rice milk.
  • Close the container and shake it well to mix the ingredients.
  • Put the container in the fridge. Let it rest half an hour then shake it again to prevent the chia seeds to stick to the bottom.
  • Let the pudding rest in the fridge from 5 hours up to overnight.
  • After the rest, the chia pudding is ready to be poured into cups and served.


*Stevia can be replaced with a natural sweetener to taste like maple syrup or agave. A spoon will be enough as rice milk is naturally sweet.
Serve the chia pudding with fresh or dried fruit to taste and chopped nuts for a healthy breakfast or tasty snack.
The chia seeds pudding will keep in the fridge for 4 to 5 days, if you add any fruit toppings just before serving.
