Double chocolate raspberry brownie {vegan recipe}

  • 1 tablespoon chia seeds + 4 tablespoons water
  • 140 g flour
  • 50 g potato starch
  • 50 g cocoa powder
  • 1 teaspoon baking powder
  • 1 pinch of salt
  • 120 g brown sugar
  • 200 ml plant based milk or water
  • 50 g dark chocolate chips
  • fresh raspberries q.s.
  • sliced almonds q.s.


  • Preheat the oven to 350°F. Line a 20x25cm rectangular mold with parchment paper and set aside.
  • Mix chia seeds with water in a small cup and set aside.
  • Sift together the flour, starch and cocoa in a large bowl.
  • Add sugar, baking powder and a pinch of salt and mix well with a whisk.
  • Now add the chia seeds and plant milk (or water) stirring with the whisk until you obtain a smooth batter, without lumps.
  • Add to the mixture the dark chocolate chips and stir just enough to distribute them evenly.
  • Pour the brownie batter into the prepared mold and level with a spatula or the back of a spoon.
  • Top the brownie batter with fresh raspberries and sliced ​​almonds.
  • Bake the brownies for 20 minutes, then remove them from the oven and let them cool slightly before serving.


These brownies are really enjoyable simple; with ice cream or whipped cream they become a wonderful dessert.
Leftovers can be stored in an airtight container and kept in the fridge for a few days. You can enjoy them both cold or slightly heated, they'll return as freshly baked.
