Cucumber simple vegan tzatziki

  • 200 g natural soy yogurt
  • 1 small cucumber
  • salt to taste
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon organic dried thyme or fresh thyme leaves


  • Pour the yogurt in a colander lined with a properly cleaned fine textured cloth.
  • Put the colander over a bowl and store it in the fridge for a few hours (from a couple of hours up to half a day; the more you let it rest, the more compact it will get).
  • Grate the cucumber, squeeze it with your hands, add it to the yogurt with salt, thyme and garlic.
  • Mix well and serve, or refrigerate until ready to serve.


If you serve the tzatziki immediately, you will have a pleasant contrast between the crispiness of cucumber and softness of drained yogurt. Leaving the sauce in the fridge for a day or two will soften the cucumber, giving a more uniform texture to your tzatziki. It's very tasty anyway :)
Serve the tzatziki with raw vegetables (carrots, tomatoes, cucumbers ...) or grilled ones (like eggplant, zucchini, onions ...). And of course don't forget some bread, pita will be perfect.
