Roasted tofu and summer vegetables quinoa salad

Ingredienti
  

  • 160 g mixed quinoa red, black, white
  • 1 tbsp coarse salt
  • 100 g natural tofu
  • 1 medium eggplant
  • 1 medium zucchini
  • 10 cherry tomatoes
  • 10 cm of leek or 1 medium shallot
  • 2 tablespoons soy sauce
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons extra virgin olive oil
  • salt pepper q.s.
  • fresh lemon thyme leaves q.s.

Istruzioni
 

  • Preheat the oven to 390°F.
  • Bring to a boil 4 cups of water and the coarse salt in a pot. When the water reaches the boil pour the quinoa, stir well and simmer for 15 minutes.
  • Meanwhile let's prepare the vegetables: cut the zucchini and eggplant into 1 cm cubes, the cherry tomatoes in half and the leek or shallot into thin slices. Also cut the tofu into 1 cm cubes.
  • Prepare an emulsion mixing soy sauce, apple cider vinegar and olive oil.
  • Put the chopped vegetables and tofu cubes in a baking tray, season with the emulsion just prepared and season with salt and pepper to taste.
  • Bake the vegetables and tofu for about 15 minutes, unitl they get lightly browned. Make sure they don't dry out too much, in case cover the tray with aluminium foil.
  • The quinoa should now be done; pour it into a colander, rinse under cold running water and let it cool.
  • When the tofu and vegetables are done too, take them out of the oven and let them cool down.
  • We are now ready to assemble the salad: put in a bowl the quinoa, roasted vegetables and tofu (along with the sauce they formed in their baking pan), add plenty of fresh lemon thyme leaves and extra virgin olive oil to taste. Mix well and serve immediately, or refrigerate until ready to serve.

Note

Lemon thyme characterizes the flavor of this salad making it fresh and fragrant; if you can't find it, you can replace it with common thyme (or oregano), with the addition of 2 or 3 tablespoons of lemon juice.
You can subsitute tofu with feta cheese; in this case I suggest to avoid adding salt to the vegetables, as feta has a quite salty flavour.
