Coconut and cherry popsicles

  • 30 g coconut flour
  • 180 ml water
  • 150 g fresh pitted cherries
  • 2 tablespoons honey or maple syrup, rice malt


  • Let's start preparing coconut milk: put coconut flour in a cup, add water and let it rest for half an hour.
  • Meanwhile blend the cherries along with a tablespoon of the sweetener you prefer.
  • Add the other tablespoon of sweetener to the coconut milk and line your popsicle molds.
  • Fill up each mold a little less than half with the coconut milk; add two tablespoons of cherries, and fill the molds with the remaining coconut milk.
  • Place its stick in every mold, stirring a little to create a marble effect. Put the molds in the freezer until the popsicles will be completely solid (at least 4 hours).


You can use plastsic cups instead of popsicle molds and reuse wooden ice cream sticks, well washed and dried. In this case, you must take care to freeze the popsicles for a couple of hours without the stick, then add it when the popsicles will be halfway solid.
You can replace the coconut flour and the water in this recipe with 200ml of whole coconut milk.
