Oat blueberry whole wheat scones

Ingredienti
  

  • 1/2 cup applesauce
  • 1/4 cup malt
  • 1/2 cup soy milk + 1 teaspoon of apple cider vinegar
  • 1 tablespoon corn oil
  • 1 teaspoon natural vanilla flavoring
  • 1 1/2 cup whole wheat flour
  • 2 teaspoons of baking powder
  • 1 pinch of salt
  • 1/2 cup of rolled oats
  • 2 tablespoons dried cranberries
  • 1 tablespoon of soy milk for brushing

Istruzioni
 

  • Pour apple cider vinegar into milk and let it stand apart.
  • Mix liquid ingredients (except milk & vinegar) in a bowl, dry ingredients (except cranberries) in another bowl.
  • Combine the liquid ingredients to dry ingredients and mix well; now add the milk with vinegar and cranberries and stir well again to distribute them evenly.
  • Put on a baking tray some baking paper, and take a spoon; form two equal dough disks about, 1 cm high; cut each disk into 6 wedges and brush all over with soy milk (see photo above).
  • Bake the scones in a preheated oven at 200 ° C for 20 minutes.

Note

Once scones are done, let them cool then place them in a glass jar or airtight tin. They will keep soft and fragrant for several days.
Those who are not vegan or prefer to use more traditional ingredients, can replace the malt with honey and soy milk with cow's milk; however, I recommend you to try the recipe with plant based ingredients, as it is an excellent example of how food san be healthy and tasty at the same time :)
You can vary the scones by adding to (or in place of) dried cranberries some fresh berries, chocolate chips or even better healthy and tasty chopped nuts (walnuts, pine nuts, almonds, etc ...).
