Light vegan mayo

  • 125 g yogurt plain soy
  • 50 ml oil sunflower
  • 1/2 tsp turmeric powder
  • 1 pinch salt
  • 1/2 tsp lemon juice (or apple cider vinegar)


  • Combine the yogurt, turmeric salt and lemon juice in an immersion blender cup.
  • Pulse with the blender just a few times, then start pouring the oil little by little with the blender running.
  • When you have finished the oil blend at high speed for a couple of minutes; the mixture will get thick and airy.
  • You can serve the mayo right away, but for better texture rest 1 hour in the fridge.


Store the light vegan mayo in an airtight container, keep in the fridge up to 10 days.
