Sweet vegan pastry recipe

For a 9 inch pie crust or about 30 biscuits.

  • 225 g flour whole wheat
  • 60 g brown sugar
  • 1 tbsp flax seeds
  • 50 g oil sunflower
  • q.s. water cold
  • 1 pinch salt


  • Blend flax seed into a coarse flour, add 50 ml of cold water and let rest 5 minutes.
  • Add sunflower oil to flax seeds and whip using an electric whisk.
  • Mix in a bowl whole wheat flour, brown sugar and a pinch of salt, knead quickly adding the liquid ingredients and some more cold water a little at a time, until you get a firm dough.
  • Keep the vegan sweet pastry in the fridge for at least half an hour before you roll it out.


How to bake this sweet vegan pastry:
For a fruit or jam tart, put the filling on the pastry and bake at 350°F for 30 to 40 minutes. Same oven temperature but only 15 to 20 minutes for cookies.
