Maqui pancakes {vegan & gluten free}

For the vegan GF pancakes

  • 1 cup oat flakes (gluten free)
  • 1/8 cup rice flour
  • 1/8 cup tigernut flour*
  • 1 tsp baking powder
  • 1 pinch salt
  • 1 cup milk plant based (of your choice)
  • 1 banana ripe

For the topping

  • 4 tbsp maple syrup
  • 2 tbsp water
  • 1 tbsp coconut flour
  • 4 tbsp maqui berries


  • For the pancakes, follow my quick video recipe.
  • For the topping, combine maple syrup, water, coconut flour and maqui berries in a glass jar. Close it and shake well, then pour generously on pancakes.


*Can be replaced with almond, nuts or hemp flour.
My vegan gluten-free pancakes keep well for a few days in the fridge. Topping can be stored in the fridge too, sealed in a glass jar up to ten days.
