Whole wheat piadina (flat bread) recipe

  • 500 g flour whole wheat
  • 250 ml water
  • 40 g vegetable shortening or olive oil
  • 1/2 tsp salt
  • 1/2 tsp bycarbonate (or 1/2 sachet baking powder for a softer bread)


  • Put the flour in a bowl along with salt and baking soda, mix well with a big spoon. Form a hole in the center and pour the vegetable shortening or oil into it.
  • Add water little by little and go on mixing with the spoon to obtain a compact dough. Finish it by hands to make it smooth and homogeneous.
  • Divide the dough into 8 and roll each part out in a thin circle. Cook each bread on a hot non-stick pan over low heat, on each side for about 2 minutes.


If you want to prepare the piadina bread in advance or to make a stock, you can cook them halfway on the pan and let them cool down lined on a board. Then put them in a food bag and store in the fridge up to one week. When in need, just heat them on a hot pan and they'll be as good as just prepared.
