White chocolate healthy blondies

  • 150 grams flour whole wheat
  • 30 grams brown sugar
  • 35 grams white chocolate powder*
  • 1 pinch salt
  • 6 grams baking powder
  • 50 grams vegetable shortening
  • 100 ml milk (soy, rice or almond)
  • 20 grams pecans shelled
  • 20 grams goji berries dried


  • Whisk together the flour, yeast, salt and white chocolate powder. Add sugar, milk and margarine and whisk to get an homogeneous batter.
  • Add goji berries (preferably soaked in water for 10 minutes), chop coarsely the pecans and add them too. Whisk to distribute them evenly.
  • Pour the blondies batter into a 8 inch square baking tray covered with parchment paper.
  • Bake in preheated oven at 360°F for 20 minutes then let cool down. Cut into 9 squares and enjoy your healthy white chocolate blondies!


The blondies keep well in the fridge up to 5 days.
* You can substitute it with 45g melted white chocolate plus 1 tsp corn starch.
