Preheat oven at 360°F. Put the flour, baking soda, salt, sugar and cinnamon in a large bowl and mix well with a whisk.
Combine plant milk, vanilla extract, oil and lemon juice into a jug then pour them into the bowl with dry ingredients. Add the cacao nibs and mix using a spoon just as long as the batter is homogeneous.
Fill muffin molds 3/4 full and bake for 25 minutes. Let your cacao nibs muffins cool completely then enjoy!
