Rainbow salad with tahini dressing

  • 1 handful spinach
  • 1 carrot
  • 3 tomato cherry
  • 50 grams cabbage purple
  • 3 tablespoons edamame beans, frozen
  • 1 teaspoon tahini
  • 1 teaspoon olive oil
  • 1 tablespoon lemon juice
  • q.s. salt
  • q.s. pepper


  • Put in a large bowl the spinach, sredded carrots, tomatoes and cabbage cut into slices.
  • Blanch frozen edamame for about 2 minutes, drain and add them to the other veggies.
  • Combine tahini, olive oil and lemon juice and pour over the salad. Add salt and pepper to taste, mix well and serve.


You can prepare this salad for a healthy take away meal: just keep the dressing, salt and pepper apart in a small container and add it to your salad just before eating.
