Fill a large pot three-quarters of the way up with water, add the coarse salt and bring to the boil.
Meanwhile put in a pan the clove of garlic (chopped or whole if you prefer a delicate flavor), add the olive oil and put it on the stove over medium heat.
When the garlic begins to sizzle and oil is fragrant add date tomatoes cut in halves. If you wish you can now remove the clove of garlic.
Season tomatoes with salt and pepper and let simmer over a gentle heat.
As soon as the water reaches the boil, pour the spaghetti and cook for 4 minutes.
Take the spaghetti out of water using a big slotted spoon and stir them into the date tomatoes sauce.
Add two cups of spaghetti cooking water and let simmer uncovered for 4 minutes over medium heat.
As the pasta dries add more spaghetti cooking water so that the pasta is always almost covered with water.
After 4 minutes turn up the heat so that the remaining water dries out completely.
Turn off the heat, add plenty of oregano and enjoy.

This pasta can be spiced up by adding red pepper flakes to taste, just before serving.
