Vegan greek salad

Ingredienti
  

  • natural tofu 80-100g each person
  • tomatoes
  • cucumbers
  • green peppers
  • red onion
  • black olives
  • fresh thyme or oregano
  • salt
  • vinegar
  • organic extra virgin olive oil

Istruzioni
 

  • Cut the tofu into cubes and place it in an airtight container.
  • Sprinkle with an emulsion made of olive oil and vinegar, mixed in the ratio of 1:2.
  • Salt lightly, close the container and whisk. Let stand.
  • Prepare the vegetables: slice ​​tomatoes and cucumbers (I peel them by stripes in order to leave some skin, because it's the part that contains sterols, healthy anti-cancer and anti-cholesterol substances...and it is also tasty).
  • Cut the peppers and onion into strips.
  • Now take a bowl and assemble the salad: pour together all the chopped vegetables, olives, tofu cubes with their marinade.
  • Add a lot of thyme leaves (oregano is more traditional, but I prefer thyme because it's more delicate).
  • Mix well and serve.

Note

This salad can be prepared in advance and kept in the fridge. Leftovers can be stored in the fridge for a day or two...the more it rests, the more it gets tasty ;)
Don't be scared by the presence of raw onion...red onions are very sweet. If you find it difficult to digest raw onions (I find it difficult too), add only a few strips to your salad...it will give flavor without being stodgy.
