Orange tahini cookies

Ingredienti
  

  • 100 g spelt flour or flour of your choice
  • 50 g whole wheat flour
  • 40 g cane sugar
  • 1/2 teaspoon sodium bicarbonate
  • 25 g tahini
  • 100 ml orange juice

Istruzioni
 

  • Mix together flour, sugar and baking soda. Form a pile and put the tahini in the center. Add a splash of orange juice and begin to knead with your fingertips.
  • Continue to knead adding the juice until the dough is compact and very soft;  add a little water if needed.
  • The dough should be soft and slightly sticky (softer than a traditional puff pastry).
  • Put some baking paper on a baking tray and begin to form the cookies with your hands: form pieces of dough about the size of a walnut, roll them into balls and flatten them with your hands about half a centimeter thick.
  • Put the cookies on baking paper, leaving some space around them as they rise while baking.
  • Bake the cookies in a preheated oven at 180°C (350°F) for 12 minutes.

Note

If you like your cookies to be more crunchy, turn off the oven and let them cool down into it after baking.
Remove cookies from the oven, let them cool and place them in a glass container or tin; they will keep fragrant and tasty for a long time.
If you use homemade tahini (toasted sesame seeds blended with a little oil), some whole sesame seeds left will give a yummy extra-crunchiness to your cookies.
You can change orange juice for plant milk or fruit juice of your choice.
