Ingredienti
For the whole wheat sourdough pizza dough
  • 250g flourwhole wheat
  • 80g sourdoughfresh
  • 200ml water(or 100ml water + 100ml milk)*
  • 40g olive oil
  • 1/2tsp salt
For the topping
  • q.s. tomatosauce
  • q.s. mozzarella cheese(optional), plus vegetables, olives, etc…
  • 1pinch salt
  • 1tsp oregano
Istruzioni
  1. Put the sourdough in a large bowl along with water (or water and milk) and mix well with a spoon until it is dissolved completely.
  2. Add the flour and mix using the spoon, when the mixture is almost omogeneous add the oil and salt and go on kneading until you get a soft and smooth dough. Cover the bowl with a clean cloth and let it rest at room temperature for a couple of hours. **
  3. Brush lightly with oil a 13×12 baking pan and spread the pizza dough into it using a spoon to distribute evenly. Season by spreading some tomato sauce then let the pizza rise for one hour.
  4. Bake the pizza in a preheated oven at 400°F for 15 minutes, add any other ingredients such as mozzarella cheese, grilled vegetables, etc… , add a pinch of salt and plenty of oregano then bake 5 minutes more. You can now enjoy your homemade soft, whole wheat sourdough pizza!
Recipe Notes

* Adding milk makes your pizza softer, if you are vegan or lactose intolerant you can use unsweetened plant milk except for rice and nuts milk (their flavor is not suitable for this recipe).

** If it’s more comfortable for you, you can store your pizza dough in the fridge and let it rise overnight, the bowl must be closed with food wrap. You’ll just have to let the dough rest at room temperature for a couple of hours before going on with the next steps of the recipe.
