Rainbow salad with tahini dressing

  • 1handful spinach
  • 1 carrot
  • 3 tomatocherry
  • 50grams cabbagepurple
  • 3tablespoons edamamebeans, frozen
  • 1teaspoon tahini
  • 1teaspoon olive oil
  • 1tablespoon lemonjuice
  • q.s. salt
  • q.s. pepper
  1. Put in a large bowl the spinach, sredded carrots, tomatoes and cabbage cut into slices.
  2. Blanch frozen edamame for about 2 minutes, drain and add them to the other veggies.
  3. Combine tahini, olive oil and lemon juice and pour over the salad. Add salt and pepper to taste, mix well and serve.
Recipe Notes

You can prepare this salad for a healthy take away meal: just keep the dressing, salt and pepper apart in a small container and add it to your salad just before eating.
