Ingredienti
  • 110g flourwhole wheat
  • 40g quinoaflour (or whole wheat flour)
  • 65g brown sugar
  • 4g baking powder
  • 70g pumpkincooked and smashed
  • 30g oilsunflower
  • 1pinch salt
  • 1pinch bycarbonate
  • 35g pecansor walnuts
  • 50g dark chocolatechips or chopped
Istruzioni
  1. In a large bowl mix the pumpkin and brown sugar. Add the flours, baking soda, baking powder, salt and oil and mix with a spoon until you get a smooth dough.
  2. Add chopped walnuts and chocolate and stir to distribute them evenly.
  3. Wet your hands and form the cookies, lay them on a baking tray lined with parchment paper.
  4. Put the cookies in the fridge for one hour to rest then bake at 360°F for 15 minutes.

These pumpkin chocolate cookies keep well in a tin or glass container for two weeks.
