  • 125g yogurtplain soy
  • 50ml oilsunflower
  • 1/2tsp turmericpowder
  • 1pinch salt
  • 1/2tsp lemonjuice (or apple cider vinegar)
  1. Combine the yogurt, turmeric salt and lemon juice in an immersion blender cup.
  2. Pulse with the blender just a few times, then start pouring the oil little by little with the blender running.
  3. When you have finished the oil blend at high speed for a couple of minutes; the mixture will get thick and airy.
  4. You can serve the mayo right away, but for better texture rest 1 hour in the fridge.

Store the light vegan mayo in an airtight container, keep in the fridge up to 10 days.
