Easy vegan gnocchi

Ingredienti
  • 180g tofu
  • 140g riceflour
  • 70g water
  • 1pinch salt
  • 1/2tsp turmericpowder (optional)
  • basilleaves (optional)
Istruzioni
  1. Bring a large pot of salted water to a boil. Meanwhile combine tofu, water, salt and 130g of rice flour in the bowl of a blender. Add turmeric and herbs – if using – then blend until you get an homogeneous mixture.
  2. Pour the gnocchi dough on a surface sprinkled with remaining rice flour. Divide the dough into four and roll each piece into a rope about 3/4 inch in diameter. Using a sharp knife, cut each rope in 1 inch large pieces to obtain the gnocchi.
  3. Simmer gnocchi into boiling water until they start to float. Drain and sauté for a couple of minutes in a hot pan with choosen sauce (see notes), top with fresh herbs to taste and serve immediately.
