Ingredienti
  • 2 eggplant(800g approximately)
  • 120g breadwhole wheat (stale is fine too)
  • 60g almondflour (or nutritional yeast flakes)
  • 1clove garlic
  • 1/4cup milksoy
  • q.s. basil
  • q.s. thyme
  • q.s. rosemary
  • q.s. salt
  • q.s. pepper
  • q.s. olive oil
Istruzioni
  1. Wash and cut eggplants in quite small cubes. Put them in a non-stick pan with 3 to 4 tablespoons of water, cover with a lid and simmer over medium heat until soft (about 10 minutes). Remove the lid and cook 5 minutes more on low heat then set aside.
  2. Mix bread, garlic and the herbs leaves in a blender. Crush the eggplants coarsely using a fork then add flavored bread, almond flour or yeast, milk, salt and pepper according to taste. Mix until you get a firm dough; add a little more milk if it turns out dry.
  3. Form mixture into small (fritters) or big (burgers) patties and line them on a tray, covered with parchment paper.
  4. Brush with oil and bake at 360°F for 25 to 30 minutes turning once, until the patties get golden brown.
Recipe Notes

It is possible to freeze the eggplant patties or fritters once baked and cooled down; after that you just need to put them straight from the freezer to the oven at 360°F for 15 minutes.
