La fluffosa al cioccolato senza glutine è una versione speciale di chiffon cake: una base di torta fluffosa al cacao e farina di riso, con glassa al cioccolato fondente senza lattosio.

La ricetta della torta base è tratta dal libro Le Fluffose di Monica Zacchia; ottima al naturale per la colazione o il tè del pomeriggio, farcita e decorata diventa una torta sontuosa, perfetta per i giorni di festa.

Che scegliate di farcirla o meno, la torta fluffosa non ha bisogno di nessuna bagna perchè è super soffice, anche nella versione gluten free. Merito dell’olio che le conferisce una morbidezza senza uguali, che si mantiene fino all’ultima fetta. Anche se tenete la torta in frigorifero!

Ingredients
    • Per la torta:

 

    • 150g di farina di riso

 

    • 50g di Cacao amaro

 

    • 180g di zucchero di canna grezzo

 

    • 4 uova bio

 

    • 80g di olio di girasole

 

    • 130g di acqua tiepida

 

    • 1 bustina di lievito per dolci senza glutine

 

    • succo di limone q.b.

 

    • Per la glassa al cioccolato:

 

    • 50g di cioccolato fondente

 

  • 30g di latte vegetale (soia o riso)

This chocolate chiffon cake is a decadent, gluten-free chocolate cake you can prepare for any need.

It’s a perfect treat as-is for a sweet breakfast or the afternoon tea, to dress it up, you can pour a rich and glossy chocolate glaze over the top. At its most decadent you can turn it into a layer cake, by splitting it in half and filling it with a delicious cream. Then pour the chocolate glaze over the top, smooth it over the sides of the cake and here’s your beautiful, delicious party cake.

Those without gluten free needs won’t notice the difference because the gluten-free chocolate chiffon cake is as moist as any made with regular flour.

The oil gives the chiffon cake a wonderful moist and tender crumb, the cake keeps soft even if refrigerated.

The chocolate chiffon cake is also easy to prepare, just take care to turn it upside down immediately after removing from the ovenas this keeps the cake from losing its softness and volume as it cools down.

Gluten free chocolate chiffon cake

Ingredienti
  

For the chiffon cake

  • 150 g rice flour
  • 50 g cocoa powder
  • 180 g brown sugar
  • 4 organic eggs
  • 80 g sunflower oil
  • 130 g warm water
  • 1 teaspoon gluten free baking powder
  • a few drops of lemon juice

For the chocolate icing

  • 50 g dark chocolate
  • 30 g plant milk soy or rice

Istruzioni
 

  • Preheat the oven to 325°F. Sift the flour into a bowl with sugar, baking powder and cocoa then make a hole in the center.
  • Separate egg yolks from whites. Mix oil with warm water using a whisk, pour in the middle of the sifted dry ingredients along with egg yolks. Stir with the whisk to obtain a homogeneous batter.
  • Add a few drops of lemon juice to the egg whites and beat until stiff.
  • Add the egg whites to the cake batter little by little, stirring gently bottom up.
  • Pour the cake batter in a 7 inch chiffon cake pan. Bake for 1 hour and 15 minutes.
  • Cool the chiffon cake completely upside down, then run a knife around the pan edges to turn cooled cake out onto a serving plate.
  • Melt dark chocolate in a double boiler, add the milk slightly heated. Stir until you have a smooth and shiny glaze to drizzle over the top of the cake.

Note

The gluten free chocolate chiffon cake keeps well at room temperature up to 4 days, closed in a cake stand or an airtight container. You can also store in the fridge up to one week.
